2012 Recherché Reserve Chardonnay - Rosella's Vineyard

This classic Santa Lucia Highlands Chardonnay is made entirely from the Dijon 76 clone. This unique site accentuates the tropical fruit characteristics that define the region. In addition, this particular location adds layers of citrus, peach and honeysuckle. To capture as much of the complexities of the fruit, the grapes were pressed immediately when they arrived at the winery. After settling we inoculated with Montrachet yeast. Over the years we have found that Montrachet brings out the dominant fruit flavors as well as elevating subtle secondary layers of fruit. We also love the effect of aging the wine on the lees with this yeast. After barrel fermentation and malolactic fermentation, we let the wine rest on the lees for 12 months. As the yeast breaks down, regular stirring of the yeast adds a beautiful brioche component, which balances perfectly with the French oak and layers of fruit. Finally, the sur lie aging adds a rich texture to the wine. The incredible complexity and age-ability of Rosella's Vineyard Chardonnay will always find a home in our reserve program.
